How long can food sit out before it is unsafe to eat?
The general guideline most food-safety agencies converge on is two hours: perishable food left at room temperature for longer than that should be treated as a food-safety risk, not just a quality one, and the window drops to about one hour once the room is above roughly 32°C. That is a much stricter clock than the one this site usually talks about. Everything else here is about the fridge — days, sometimes weeks. This is about hours, and it runs for a genuinely different reason.
Why this is a different kind of clock
Food-safety guidance calls the range between about 4°C and 60°C the "danger zone", because it is the temperature band where the bacteria that cause food poisoning grow fastest — under the right conditions, their numbers can double in as little as twenty minutes. A fridge is deliberately kept below that zone, which is why the questions elsewhere on this site are about days and flavour. A kitchen counter sits right in the middle of it. That is not a small difference in degree; it is the difference between a process that takes the better part of a week to matter and one that takes the better part of an afternoon.
Why "it looks and smells fine" does not help here
Almost every other guide on this site leans on your senses — smell the milk, look at the leftovers, trust a sip over the date on the carton. That advice is sound for spoilage, which is caused by organisms that change how food tastes, smells or looks precisely because that is how they grow. It does not transfer to this question. The bacteria most associated with foodborne illness — Salmonella, Listeria, Staphylococcus aureus, Bacillus cereus among them — do not reliably produce an off smell, a change in texture or a bad taste at the levels that make someone sick. Food that has been sitting out too long can look, smell and taste completely normal and still not be a safe bet. This is the one place on this site where the usual advice to trust your senses over a printed number genuinely does not apply, and it is worth knowing that in advance rather than discovering it by testing it.
Why the window is not the same for everything
The two-hour guideline is really written for what food-safety literature calls "potentially hazardous" foods — the ones with enough moisture, protein and neutral pH to support fast bacterial growth. Meat, poultry, seafood, eggs, dairy, cooked rice and pasta, cut fruit and anything with a cream, egg or dairy-based sauce all sit in that category, which is why cooked rice in particular gets a specific caution of its own elsewhere on this site: Bacillus cereus spores survive cooking and can produce a toxin at room temperature that reheating does not destroy afterward. Foods with very little available moisture — bread, crackers, whole unwashed fruit, most baked goods — are a genuinely different case; they are not immune to bacteria, but they do not support fast bacterial growth the way a bowl of cooked rice or a plate of sliced chicken does, so the same two-hour rule is not really the operative risk for them.
The clock also is not fixed at two hours regardless of conditions. A hot car in summer, direct sun through a window, or a buffet table under warming lights all push food through the danger zone faster than a shaded kitchen counter does, which is the actual reasoning behind halving the guideline to about an hour once the air itself is hot. The number is a guideline calibrated to typical indoor conditions, not a fixed property of the food.
The cooling-down trap
The most common way this clock runs out unnoticed has nothing to do with food left out on purpose. It is a pot of soup, a tray of roast vegetables or a pan of rice cooling on the stove before anyone gets around to putting it away, on the reasonable-sounding logic that hot food should not go straight into a cold fridge. The reasoning is not wrong, but the practical effect is that a large, deep pot holds its centre well above the danger zone for far longer than it looks like it should from the outside — sometimes for hours, long after the surface has stopped steaming. This is exactly the gap covered on the leftovers side of this site: splitting a big batch into smaller, shallower containers before refrigerating lets the whole thing cool through the danger zone quickly, rather than leaving a hot core sitting at room temperature well past the point anyone thinks of it as "sitting out".
What actually helps
- Treat the two-hour mark as a hard stop, not a rough guess. Unlike a best-before date, this is not a number you can reasonably overrule with a sniff test — the risk here does not announce itself.
- Halve it in the heat. A picnic, a car boot in summer, or a kitchen without air conditioning on a hot day all call for roughly one hour, not two.
- Split hot food into shallow containers before it goes in the fridge, rather than letting a full pot cool on the counter first. This gets the food through the danger zone faster, not slower.
- Know which foods this actually applies to. A bowl of crackers left out overnight is a different situation from a bowl of rice or a plate of chicken — treat the potentially hazardous foods with the strict two-hour rule and worry less about the rest.
- When in doubt about how long something has actually been out, do not use taste as the tiebreaker. This is the one category where guessing based on how it seems is genuinely worse than just discarding it.

But the two connect at exactly one point: when a cooked meal finally does go into the fridge, logging it there with today's date puts a real, visible countdown on the leftovers, instead of leaving "how long has this actually been in here" as another guess made from memory a few days later.
None of this needs to be memorised as a table of exceptions. The short version covers almost every case: two hours at normal room temperature, one hour in real heat, and for this particular question, do not let a food that seems fine talk you out of the clock.
