How long can you keep food in the freezer before it goes bad?

The short version: food kept continuously frozen at a steady 0°F / -18°C is safe to eat more or less indefinitely — freezing does not kill bacteria, but it stops them cold, and that clock genuinely does not run while the food stays solid. What actually runs out, on a much shorter and much less forgiving timeline, is quality. A joint of meat that is perfectly safe after a year in the freezer can already taste noticeably worse than it did after two months. "Is it safe" and "is it still good" are two different questions in a freezer, in a way they usually are not in a fridge, and mixing them up is why perfectly edible food gets thrown out and genuinely tired food gets eaten without anyone noticing the difference.

Two clocks, not one

In the fridge, safety and quality tend to decline together, roughly on the same schedule — by the time milk tastes off, it usually is. The freezer breaks that link almost completely. One clock is bacterial: freezing does not sterilise food, it just makes the bacteria on it dormant, and dormant bacteria are not multiplying, not producing toxins, not doing anything at all until the food thaws. That clock is effectively paused for as long as the food stays frozen. The other clock is physical and has nothing to do with bacteria: moisture slowly leaves the food's surface as vapour, fats slowly oxidise and turn slightly rancid, and the plant or animal cells' own enzymes keep doing a small amount of quiet chemistry even at freezing temperatures, just very slowly. None of that makes the food unsafe. All of it makes the food a little less like itself — drier, blander, occasionally a bit tougher or mealier — the longer it sits.

Roughly how long quality actually holds

These are the ranges general food-safety guidance converges on for quality, not a hard safety limit, and they assume a freezer that holds a steady 0°F / -18°C and food that is wrapped reasonably well. Real freezers and real packaging vary, so treat this as a starting point rather than a verdict on the specific bag at the back of yours.

  • Raw ground meat and mince. Best within a few months — more surface area than a whole cut means more exposure to air, so quality moves faster here than almost anywhere else in the freezer.
  • Raw steaks, chops and roasts. Considerably longer than mince, commonly the better part of a year, because the intact surface loses moisture and picks up oxidation much more slowly.
  • Raw whole poultry or large cuts. Similar territory to steaks and roasts, often the longest-holding raw meat in a typical freezer.
  • Cooked meat and mixed leftovers. Noticeably shorter than raw — usually a few months — because cooking has already broken down some of the structure that would otherwise protect it.
  • Vegetables, especially if blanched first. Often the best-holding category in the whole freezer, frequently the better part of a year, precisely because blanching is what deactivates the enzymes that would otherwise keep working in the cold.
  • Bread and baked goods. A few months before texture, not safety, starts to suffer.

Every one of these numbers is really describing the same underlying thing at different speeds: how much exposed surface the food has, and how much water and fat it contains.

Why vegetables get blanched and meat does not

This is the one step that looks fussy but is doing real work. Vegetables are alive, in a sense, right up until you cook them — the enzymes that ripened them in the field do not switch off just because the vegetable was picked, and freezing slows those enzymes drastically without stopping them completely. Left un-blanched, they keep very slowly changing colour, texture and flavour for as long as they sit frozen, which is why home-frozen raw vegetables can turn oddly grey or mushy months later even though nothing unsafe happened to them. A brief plunge into boiling water before freezing deactivates those enzymes outright, which is why blanched vegetables hold their quality so much longer than the same vegetable frozen raw. Meat does not have this problem in the same way — cooking it, not blanching it, is what does the equivalent job, which is part of why cooked leftovers and raw cuts behave so differently in the freezer despite being the same category of food.

What actually shortens the window

Almost everything that speeds quality loss comes down to air, temperature swings, or size.

  • Air touching the food. Any gap between the food and its wrapping is where moisture goes to leave — this is the direct cause of freezer burn, and it is the single biggest lever most people have.
  • A freezer that is opened often, or does not seal well. Every warm-cool cycle nudges a little more moisture out of the food, even if the average temperature looks fine on a thermometer.
  • Large, dense portions. A big block freezes and thaws more slowly at its centre than the edges get colder, which gives more time for ice crystals to grow large and coarse — the texture damage people usually blame on "freezer age" is often really about portion size.
  • Thawing and refreezing. Each cycle reorganises ice crystals into bigger, rougher ones and pushes more moisture toward the surface, which is a real hit to texture even when the food is still perfectly safe to eat.

The date that actually matters

None of the ranges above are useful if you cannot remember when something went in, and the freezer is uniquely bad at reminding you — nothing wilts, nothing smells, nothing changes colour where you can see it through an opaque bag. A joint of meat frozen at Easter and one frozen at midsummer look identical in December. The fix is the same low-tech one that works everywhere else in this kitchen: write the date on the bag before it goes in, not after you start wondering. It turns "how long has this actually been in here" from a guess into an answer.
