How long does opened kefir last in the fridge?
Short answer: an opened bottle of kefir, kept properly cold, is usually good for one to three weeks, often landing toward the longer end if it is plain and kept in the main body of the fridge rather than the door. That is a wider window than opened milk, and at least as wide as opened yogurt — for a reason that goes one step further than yogurt's own: kefir is not fermented by a single strain of bacteria. It is fermented by kefir grains, a mixed colony of several bacteria species and yeast working together, which leaves an opened bottle more thoroughly occupied, more acidic, and more hostile to anything trying to move in afterward.
Why kefir starts from an even stronger position than yogurt
Yogurt is made by adding one or two bacterial cultures to milk under controlled conditions. Kefir is made with kefir grains — small, rubbery clusters that are not a grain at all but a symbiotic community of bacteria and yeast living together, the kind of culture some households keep going indefinitely by feeding it fresh milk. That community produces more types of acid, and the yeast fraction adds a little carbon dioxide and sometimes a faint trace of alcohol as a side effect of fermentation, which is exactly why kefir tastes tangier and slightly fizzier than yogurt straight out of the bottle. All of that means an unopened bottle already arrives more densely fermented than a tub of yogurt does, and opening it does not hand a mostly empty, welcoming environment to whatever bacteria happen to land in it — it hands them a bottle that is already crowded and already acidic.
What actually determines how long it keeps
Temperature, as always. A bottle kept steadily cold toward the back of the fridge holds its window; one that lives in the door, warming a little every time the fridge opens, does not. This is the same lever that matters for every fermented dairy product, and it is still the biggest one here.
How it gets drunk. Kefir is a drink, and a lot of people drink it straight from the bottle. That introduces mouth bacteria into the remaining liquid the same way a used spoon does for yogurt — it is the single easiest thing to change. Pouring what you want into a glass, rather than sipping from the bottle and putting it back in the fridge, meaningfully extends how long the rest of it stays good.
The cap. A cap screwed back on tightly keeps the bottle's internal environment consistent; one left loose lets in more air, dries the rim, and gives mould spores an easier way in.
The fizz and the extra tang are not warning signs
Kefir's live cultures do not switch off in the fridge, they just slow down enormously. That means an opened bottle keeps fermenting, very gradually, for as long as it is in the fridge — which is exactly why a bottle that has been open for a week or two often tastes noticeably more sour and feels a little more carbonated when you open the cap than it did on day one. That is fermentation continuing at a crawl, not spoilage starting. The same goes for a thin, clearer layer separating from a thicker one, or for kefir looking slightly lumpier after a week than it did fresh — a quick shake brings it back together, and it is not evidence anything has gone wrong.
Signs it has actually turned
Because kefir is already sour, already a little fizzy, and already somewhat separated by nature, the useful signs are the ones that go beyond its normal character. Mould — anything fuzzy or coloured on the surface or around the cap threads — is the clearest one, and the safe move is to treat the whole bottle as done rather than pour around it. A smell that crosses from pleasantly tangy and yeasty into something closer to rotten, overwhelmingly alcoholic, or simply unpleasant in a new way is the other one worth trusting. A texture that has gone properly slimy or stringy, rather than just thicker or lumpier, and does not smooth out with a shake, is the third. None of these require memorising in advance — they read as genuinely different from every other glass you have had from that same bottle, which is a comparison most people are already equipped to make.
Store-bought versus home-fermented kefir
Everything above describes commercial kefir: pasteurised milk, cultured under controlled conditions, sold and kept cold from the dairy to your fridge. Kefir fermented at home from live grains left on the counter is a more variable process, with fermentation time, temperature and the health of the grains themselves all affecting the result in ways a factory process controls for. If that is the kefir in your fridge, the guidance that came with your grains or culture is worth trusting over a general rule, since the starting point is genuinely different from a sealed bottle bought at the shop.
