What vegetables and fruit should not be stored in the fridge?

The instinct that "cold keeps food fresher" is right often enough that it is easy to apply everywhere, but it is not a universal rule. A specific, fairly short list of vegetables and fruit actually fare worse in the fridge — gone mealy, gone sweet in the wrong way, gone soft, or just gone stale faster — than they would have on a counter or in a cupboard. None of this is about food safety; it is entirely about texture and flavour, which is exactly why it is easy to get wrong for years without anything going obviously bad.

Two different things go wrong, not one

It helps to know there are two separate mechanisms here, because the fix is different for each. The first is chilling injury: a lot of produce sold in a temperate-climate supermarket originally comes from warmer parts of the world, and its cell membranes were never built to cope with temperatures near 4°C. Below a certain point, those membranes start to break down in a way that shows up as pitting, mealiness, or a sudden loss of flavour — not rot, just damage. The second is enzyme activity: ripening and starch conversion are chemical processes that run at a rate set by temperature, and cold does not just slow spoilage, it also stalls or distorts the process a fruit or vegetable was still partway through.

The starchy ones: potatoes, onions, garlic

Potatoes are the clearest case. Below about 7°C, an enzyme in the potato starts converting starch to sugar faster than the potato would normally manage, which sounds harmless but has two real effects: the potato tastes unexpectedly sweet, and it browns much more aggressively when fried or roasted, because there is now more sugar available to caramelise. A cool, dark, ventilated spot — a cupboard away from direct light, not the fridge — keeps potatoes tasting like potatoes for weeks.

Onions and garlic have a different problem: fridge humidity. Both are built to keep in dry air with some ventilation, and the moist environment of a fridge encourages them to sprout early, turn soft, or grow mould from the outside in, well before a countertop onion would show any of that. A wire basket or an open bowl, somewhere dry and away from direct sun, does more for them than a fridge shelf ever will.

The still-ripening ones: tomatoes, bananas, avocados, stone fruit, mangoes

This group is about timing, not damage. Ripening is a chemical process that has a natural end point, and refrigeration below about 12–13°C interrupts it, sometimes permanently. A hard, unripe avocado or mango put straight in the fridge may simply never ripen properly — the process that was supposed to soften it and develop its flavour gets stalled partway through and does not reliably restart once the fruit warms back up.

Tomatoes are the case people notice most, because the damage is specifically to flavour. Cold temperatures break down the membranes inside a tomato that hold its flavour compounds, and the texture turns mealy at the same time — both effects that show up whether the tomato was ripe or not when it went in. Bananas take cold differently: the flesh is often still fine, but the skin blackens and bruises far faster than it would at room temperature, so a banana that spent a night in the fridge often looks much worse than it tastes.

The one exception worth knowing: once any of these is already ripe and you genuinely will not eat it in the next day or two, a short spell in the fridge is a reasonable way to buy a little time. The flavour and texture take a small hit, but a slightly duller ripe tomato beats an overripe one every time. The mistake is putting them in cold while they are still trying to ripen, not putting them in cold once they are done.

The smaller, easy-to-miss cases

  • Bread. The fridge is one of the worst places for it. The staling process — starch molecules recrystallising into a firmer structure — runs fastest at fridge temperatures, which is the opposite of what most people assume. Bread stales noticeably quicker in the fridge than it does sitting in a bread bin at room temperature. If you need it to last longer than a few days, the freezer is the right move, not the fridge; freezing stops the same process that the fridge accelerates.
  • Honey. Cold speeds up crystallisation, turning smooth honey grainy sooner than it would at room temperature. It does not need refrigeration at all — a sealed jar in a cupboard keeps for a very long time on its own.
  • Basil and other tender fresh herbs. Basil in particular is genuinely cold-sensitive: fridge temperatures blacken and wilt the leaves within a day or two, the same chilling-injury mechanism as tomatoes, just faster and more visible. Treating a bunch like cut flowers — stems in a glass of water, left on the counter — keeps it usable for noticeably longer than a plastic bag in the crisper drawer.

A smaller thing worth knowing: what sits next to what

Some fruit — apples, bananas, ripening tomatoes — gives off ethylene gas as it ripens, and ethylene speeds up ripening in whatever else is nearby. That is occasionally useful on purpose, if you want to hurry along a hard avocado. It is a nuisance by accident, which is the more common case: a bowl that mixes ripening bananas with leafy greens or fresh herbs tends to age the greens faster than storing them apart would. This does not require a diagram of the kitchen, just a loose habit of keeping the fruit that is actively ripening a shelf away from the things that wilt easily.

What actually helps

None of this needs to be memorised as a rulebook. The genuinely short version is: if it is starchy and was dug out of the ground, it wants cool and dry, not cold. If it is still ripening, it wants room temperature until it is done. Everything else that already lives in the fridge is probably fine exactly where it is.

The part that is easy to lose track of is simply where you decided something should live, especially once a few onions move from the pantry to a bowl on the counter and a tomato goes the other way.
