Why do egg cartons have two different dates?

Pick up a carton of eggs in the US and you may find two different things stamped on it: a short run of three or four digits with no month name and no obvious calendar shape, usually near the short end of the carton, and a separate printed date next to the words "SELL BY," "BEST BY," or "EXP." They look like they should be saying the same thing, and mostly they are answering two completely different questions. One is a packing code built for a recall. The other is a calculated, deliberately conservative date built for you.

The digit string is a pack date, not a countdown

The short number — something like 032, occasionally five digits — is a Julian date: not a calendar date but a straight count of the day of the year the eggs were washed, graded and packed. Day 001 is January 1st, day 032 is February 1st, and the count runs on to 365 (366 in a leap year) by the end of December. It is required on any carton carrying the USDA grade shield, and its whole purpose is traceability: if a problem is ever traced back to a specific plant on a specific day, this is the number that lets a recall reach exactly that run of cartons rather than everything sold under the same brand that month. It was never written to tell you how fresh the eggs are relative to today. It states, precisely, which day they were packed, for an audience that is not you.

The calendar date is a different number, calculated on purpose

The date next to "sell by" or "best by" is set from that same pack date, but it is a separate, calculated figure aimed at a different audience — the store shelf, and then your kitchen. Under federal rule, a sell-by date on a carton carrying the USDA shield cannot be set more than 30 days after the pack date, whatever the plant's own confidence in that batch might be. That is a deliberately short, conservative window, not a measurement of when the eggs actually turn — which is why eggs kept properly cold routinely stay good for several weeks past it, the point covered in more depth in the companion piece on this site about eggs and the date on their carton generally.

Why the carton needs both instead of just one

The two numbers exist because they answer questions for two different people. A recall needs precision down to a single production day at a single plant — a calendar date rounded off to the nearest week would be useless for that. A shopper standing at the shelf needs something simple and readable at a glance, not a production code to decode. Rather than compromise on one number that serves neither job well, the carton carries both: the exact one for the plant, and the simple, conservative one for you.

Reading the Julian code yourself

  • Three digits, no letters, no slashes: read it as day-of-year. 001 is January 1st, 100 is roughly April 10th, 200 is roughly July 19th, 300 is roughly October 27th — the exact date shifts by a day in a leap year.
  • A letter or a second short number stamped nearby is usually a plant code, identifying which specific facility packed the carton. It is useful for a recall notice and tells you nothing about freshness.
  • A carton that shows only a calendar date and no digit string is very likely not carrying the USDA shield, and the calendar date is the only one you need to read.

What actually matters once the carton is in your fridge

Neither date is really the number worth tracking once the eggs are home. The Julian code was never for you, and the calendar date is a rule-of-thumb built with a wide safety margin, not a measurement of the eggs sitting in your own fridge. What decides how long they are actually good is the same thing covered elsewhere on this site: how cold the fridge has stayed, and how long ago the carton actually arrived — a day you know exactly, unlike a three-digit code you would otherwise have to look up.
