Why do some foods not have an expiration date?

Pick up a bag of white sugar, a bottle of vinegar, a jar of honey or a plain bag of dried rice, and there is a real chance the label has no date on it at all — not a faded one, not one printed somewhere hard to find, genuinely none. That is not a gap in the packaging or an oversight the factory forgot to fix. In most places that regulate food labeling, a date is only required on food where the maker can point to a real point at which it becomes unsafe or meaningfully worse. For a specific, well-understood group of foods, there is no such point under normal storage, so there is nothing honest to print.

The rule is about risk, not about age

Food-labeling regulations in most countries do not actually require a date on everything; they require one on food where a date carries real safety or quality information. That is a narrower category than "packaged food" — it generally excludes things like table salt, sugar, honey, distilled vinegar, and dried goods stored in a sealed, dry state, because none of them have a meaningful point at which they stop being safe to eat when kept as intended. A regulator is not being lenient here. It is following the same logic used everywhere else on this site: a date is only useful information if it actually predicts something. Where nothing predictable changes, a printed date would be decoration, not guidance, and in some cases actively misleading — implying a cutoff that does not really exist.

What actually makes a food stable enough to skip the date

None of this is arbitrary or food-specific luck. A small number of concrete mechanisms explain almost every item on the no-date list, and they are worth knowing because they explain the exceptions too.

Not enough water for anything to grow. Bacteria, mould and yeast all need free water to multiply, not just the presence of moisture in general. Dried rice, dried pasta, sugar and salt are all low enough in available water, once sealed against humidity, that nothing can establish itself in them. This is also why the moment any of these gets wet — rice left in a damp container, sugar in a humid kitchen — the whole calculation changes; the shelf life was never really about the ingredient, it was about the water.

An environment nothing can survive in. Honey works differently: it is low in available water for the same underlying reason as sugar, but it is also acidic and produces small amounts of hydrogen peroxide as a byproduct of how bees make it, which is actively hostile to microbes rather than just inhospitable. Vinegar's acidity does a similar job from a different angle — its pH sits well below the range almost anything harmful can tolerate. Salt, at high enough concentration, pulls water out of any microbial cell that tries to sit in it, the same mechanism that has made salt a preservative for other foods for thousands of years.

Sealed and sterilized together, not just sealed. Canned food is the case people find least intuitive, because a tin looks like ordinary packaging rather than a stable substance in its own right. What actually happens during canning is that the sealed can is heated enough to destroy the organisms that would otherwise spoil it, and then kept airtight so nothing new can get back in. The shelf life is not a property of the tomatoes or the beans; it is a property of that heat-then-seal process, which is also exactly why a can that has been compromised — bulging, rusted through, or leaking — is a different situation entirely and worth discarding regardless of how long it has sat on a shelf.

"Indefinite" is not the same as "unchanging"

None of this means these foods are frozen in time. It means they will not become unsafe under normal storage, which is a narrower and more specific claim than "nothing will ever be different about them." Honey crystallizes over time — a jar can turn cloudy and grainy without being spoiled, and gently warming it usually brings it back. Dried spices and herbs do not spoil so much as they fade, losing aroma and colour years before they become a food-safety question. Salt itself is essentially permanent, but iodized salt can slowly lose iodine content over a long stretch of time, a nutritional change rather than a safety one. This is exactly the same distinction covered elsewhere on this site between best-before and use-by, just pushed to its far edge: these foods sit so far on the "quality only" side of that line that a maker is not required to put a number on it at all.

Two things that quietly change the picture

The no-date logic rests entirely on the food staying in the state it was sealed in, and two ordinary kitchen events break that assumption without changing anything printed on the label.

Opening the package. A sealed bag of rice and an open one are not the same claim. Once air, humidity and whatever else lives in a kitchen can reach the contents, the mechanism that made the date unnecessary — no available water, no way in — is no longer fully true, even though nothing on the packaging changed to reflect that. This is the same opened-food clock that runs on every other item on this site, just starting from a much longer baseline.

Storage that does not match what the stability actually assumes. A bag of sugar left somewhere humid, a tin stored somewhere it can rust through, honey kept somewhere warm enough to encourage fermentation in a jar that was not fully sealed — in each case the food's own chemistry stops being able to do the job the missing date was quietly relying on.

What actually helps

  • Read the absence of a date as information, not as an accident. It is telling you the food is stable by one of a few specific mechanisms, not that nobody got around to printing something.
  • Track the day something was opened, since that is the clock that actually starts running. The printed shelf life describes the sealed state; once that seal is broken, you are relying on your own storage, not the label.
  • Judge these foods by texture, smell and appearance rather than a date, because that is genuinely how they are meant to be judged. Clumped salt, crystallized honey, faded spices, a can that has started to bulge — each of those tells you something a date never would have.
  • Store them the way their own stability depends on: dry, sealed, and out of direct heat. The absence of a date is a promise about chemistry, not about how the food is kept, and the second part is still on you.

This is also where a no-date pantry item still benefits from being tracked at all, even without a countdown attached to it. Munch logs a batch by where it is stored — fridge, freezer or pantry — and by the day it was added, so a bag of rice or a bottle of vinegar bought "just in case" shows up before a second one gets bought on the next shop, shared across everyone in the house doing the buying.

A blank space where a date should be is not the label failing to do its job. It is the label telling you, correctly, that there is nothing time-sensitive to warn you about — right up until opening it or storing it differently quietly changes that.
