Why does the back of the fridge freeze things?
You pull out a bag of salad that has been pushed to the back and it has gone glassy and limp. There are ice crystals in the milk. A tub of yoghurt is solid on one side. The fridge is set the same as it always was, and nothing else in it is frozen. This is one of the most common fridge complaints and it is almost never a fault — it is the predictable result of where the cold actually enters the box.
The back wall is where the cooling happens
In most household fridges the cooling element sits behind the rear panel of the main compartment. Cold is produced there and then distributed through the rest of the space, either by natural convection or by a fan. That means the rear wall is always the coldest surface inside, by some margin, and anything pressed against it is sitting on the coldest part of the appliance rather than in the average temperature the thermostat is aiming for.
Because cold air is denser than warm air and sinks, the coldest region in practice is the back and the bottom together. The thermostat is trying to hold the compartment as a whole around its target — often close to 4°C — which means some parts of it are necessarily colder than that number and some are warmer. Food that freezes at the back is not evidence that the fridge is too cold overall. It is evidence that it is doing its job at the point where the cold arrives.
Three things make it worse
The dial is set colder than it needs to be. If the average is being held at 1 or 2°C, the coldest zone is comfortably below freezing, and anything with high water content that touches it will start to freeze. This is the easiest thing to check and the easiest to fix: a thermometer on a middle shelf, and one notch warmer if it is reading well under 4°C.
Airflow is blocked. A shelf packed solid against the rear wall stops cold air moving away from where it is produced. The cold then piles up in the blocked zone instead of circulating, which makes the back colder and, unhelpfully, makes the front warmer at the same time. A stuffed fridge is often simultaneously freezing things at the back and failing to keep the front cold enough.
The vent is directly behind something delicate. Fan-cooled fridges blow cold air in through one or more vents at the rear. A bag of leaves parked directly in the airstream gets a constant flow of the coldest air in the appliance, which is a different situation from merely being near the back wall.
Why some foods survive it and others do not
What is actually breaking when a vegetable freezes in the fridge is cell structure. Water inside plant cells expands as it freezes and ruptures the walls that hold the vegetable rigid. When it thaws, the water runs out and the structure does not come back — which is why a frozen-then-thawed cucumber or lettuce leaf is limp and watery rather than merely cold. It is a texture failure, not a safety one.
Foods with less free water, or with structure that does not depend on turgid cells, shrug this off. Hard cheese, butter and most cooked food are fine. Milk that has partly frozen is safe but often separates and looks grainy after thawing. Eggs can crack. The rule of thumb is that the higher the water content and the more the food depends on crispness, the less it forgives a trip below zero.
What to do about it
- Keep a gap at the back. A few centimetres of clearance between food and the rear wall solves most cases on its own.
- Put the fragile things at the front of a middle shelf. Leafy greens, cucumbers, tomatoes that are already in the fridge and anything you want crisp belong in the warmest stable zone, not the coldest.
- Check where the vents are. Once you know, it takes no effort to avoid parking a salad bag directly in front of one.
- Measure before adjusting. If a thermometer on a middle shelf reads well below 4°C, turning the dial down a notch fixes the freezing without putting the rest of the fridge at risk.
- Do not fill it to the walls. Circulation is how the cold reaches the front, and a solid wall of food defeats it.
There is a second, quieter cost to the back of the fridge, and it has nothing to do with temperature: it is the part nobody looks at. Things pushed to the back get forgotten as reliably as they get frozen. Munch tracks each batch individually with the day it arrived, and surfaces what has been there longest first, so the item at the back is not depending on somebody happening to reach past everything else to find it.
A fridge that freezes things at the back is behaving normally. The fix is usually a few centimetres of clearance and one honest reading from a thermometer, not a repair call.
