Does a full fridge stay colder than an empty one?
The claim turns up constantly: keep your fridge full and it stays colder and costs less to run. Like most kitchen folklore it contains a real mechanism, applies over a narrower range than people think, and reverses once you push it far enough. The honest answer is that a moderately full fridge recovers better than an empty one, and a fridge packed to the walls performs worse than either.
The real mechanism: thermal mass
Cold food and drink hold cold. When you open the door of an empty fridge, most of what is inside is air, and air has very little capacity to store temperature — the cold air spills out at floor level, warm room air replaces it, and the compressor has to work to cool that air again from scratch.
A fridge with a reasonable amount of food in it behaves differently. The air still swaps over, but the food does not: a few kilograms of chilled items stay cold and immediately pull heat out of the incoming air. The internal temperature recovers faster after each opening, and the swings are smaller. In a kitchen where the door opens thirty times a day, that difference in stability is worth more than the average temperature difference on the dial.
The same idea explains the standard advice for a freezer, where it matters more: a full freezer holds its temperature far longer during a power cut than a half-empty one, purely because there is more frozen mass to absorb the heat leaking in.
Where it stops being true
The mechanism that makes a stocked fridge stable is not the same as the one that keeps it cold, and this is where the folklore breaks down.
Cold has to reach the food, and it reaches it by moving air. In most fridges cold is produced at the back and distributed by convection or by a fan. Pack the shelves solid, block the vents, push everything against the rear wall, and that distribution stops working. What you get is not a uniformly colder fridge — it is a fridge with cold pockets at the back, where things may actually freeze, and warm pockets at the front, where the food you reach for most is sitting above the temperature you set.
The second problem with a very full fridge is not thermodynamic at all: nothing at the back is visible. A fridge packed to capacity loses food to being forgotten far faster than it loses food to being slightly too warm, and the losses are much larger.
What about an almost-empty fridge?
It is worth being clear that an empty fridge is not unsafe. It reaches its target temperature perfectly well; it simply recovers more slowly after the door opens, and the compressor runs more often to do it. The energy difference in a domestic setting is real but modest, and it is not a reason to buy food you do not need — food bought to fill a fridge and then thrown away costs vastly more than the electricity it saved.
If you want the stability without the shopping, containers of water or a few sealed bottles do the same job as food. In a freezer, this is a genuinely useful trick: filling the empty space with water bottles gives you thermal mass and, in a power cut, a supply of ice.
What to aim for
- Comfortably stocked, not packed. Enough that the shelves are not mostly air, with clear space around the rear wall and any vents.
- Do not block the airflow to save space. A blocked fridge is simultaneously freezing things at the back and letting the front drift warm.
- Fill a half-empty freezer with water bottles rather than food you will not eat. Same benefit, no waste.
- Judge by measurement, not by fullness. A thermometer on a middle shelf settles the question for your actual appliance.
The strongest argument against filling a fridge for its own sake is the one about visibility. Beyond a certain point, adding food does not make the fridge work better — it makes its contents invisible, and invisible food is the food that gets thrown away. Munch exists to keep that from depending on line of sight: every item is logged with where it lives and how long it has been there, shared across the household, so a full fridge is still a readable one.
Keep it comfortably stocked, keep the air moving, and let the thermometer rather than the folklore decide whether it is working.
