Does honey ever go bad?

Sealed jars of honey recovered from Egyptian tombs, thousands of years old, have reportedly still been edible. That is not an urban legend told to make a point — it is a fair description of how genuinely stable honey is, and a properly sealed jar in your own cupboard is working from the same chemistry, not an exception to it. Honey does not really "go bad" in the way milk or bread does. What it does instead is change texture over time, which people frequently mistake for spoiling and throw out for no reason.

Why honey does not behave like other food

Almost everything about honey's stability comes down to one fact: there is essentially no water available in it for anything to use. Honey is roughly 80% sugar and under 20% water, and that water is bound up tightly enough by the sugar that bacteria, mould and yeast cannot get at it to multiply — the same principle that makes salt and sugar work as preservatives for other foods, pushed to an extreme. Honey adds two more layers on top of that. It is naturally acidic, sitting around pH 3.9, which is inhospitable to most of what would otherwise spoil food. And bees add a small amount of an enzyme, glucose oxidase, while making it, which slowly generates a low, steady trickle of hydrogen peroxide inside the jar — not enough to notice, but enough to actively work against anything trying to grow. Low water, high acid, a mild antiseptic byproduct: three separate mechanisms, all pointing the same direction.

What actually changes in the jar over time

None of this means a jar stays visually identical forever. The most common change is crystallization: honey is a supersaturated sugar solution, meaning it is holding more dissolved glucose than it can really keep dissolved indefinitely, and over weeks or months some of that glucose settles back out as fine crystals. The honey turns cloudy, then grainy, then eventually solid enough to spoon out in a lump. This is a physical change, not spoilage — nothing has grown, nothing has gone off, and it reverses completely with gentle heat. A darker, slightly deeper flavor over a long stretch of time is the other common change, caused by slow, ordinary chemical reactions between the sugars and the trace compounds honey carries from whatever flowers it came from. It is a flavor drift, comparable to how a spice loses its brightness over the years, not a safety event.

The one way honey can genuinely go wrong

There is a real failure mode, and it has nothing to do with age on its own. Honey almost always carries a small population of naturally occurring, sugar-tolerant yeast, dormant because there is not enough available water for it to do anything. Add water — a wet spoon dipped in repeatedly, condensation from a lid left ajar, storage somewhere humid enough for the jar to draw in moisture — and that balance can shift enough for the yeast to wake up and ferment the honey. Fermented honey smells sharp or alcoholic, sometimes fizzes slightly, and tastes distinctly off rather than just less fresh. That is the actual "this honey has gone bad" scenario, and it is caused by moisture getting in, not by the calendar.

There is a separate and unrelated caution worth knowing, aimed at a specific group of people rather than at honey in general: honey, including a fresh, properly sealed jar, can carry dormant spores of the bacterium that causes infant botulism. An adult's gut handles this without any issue, which is exactly why it never shows up as a concern for anyone past early childhood. Health guidance in most countries is consistent and simple — do not give honey to a child under one year old. That is a rule about the child's age, not about how long a jar has been open.

How to store it so it stays at its best

The whole story above only holds if the jar is actually sealed. A cool, dry cupboard away from the stove or direct sunlight is close to ideal — heat speeds up both crystallization and the slow color-and-flavor drift, so a spot on a sunny windowsill or right next to the oven ages honey faster than the same jar tucked into a cabinet. The fridge is worth actively avoiding here: cold temperatures accelerate crystallization rather than preventing it, so refrigerated honey typically turns solid far sooner than honey left at room temperature. And a dry spoon, every time, is the single habit that does the most to keep water out of the jar in the first place.

Fixing honey that has crystallized

Crystallized honey is not honey that needs replacing. Stand the jar, lid loosened, in a bowl of warm — not boiling — water, and stir occasionally as it softens; the crystals dissolve back into solution within a few minutes to half an hour depending on how solid it had become. A microwave works faster but is easier to get wrong: short bursts with a stir in between avoid the localized overheating that can scorch honey right next to the glass while the center stays cold, and that scorching is a genuine flavor loss, not a myth. Either way, the honey that comes out the other side is the same honey, texturally reset.

Does raw honey behave differently from the filtered, pasteurized kind on a supermarket shelf?

The processing mostly affects how it looks and how fast it crystallizes, not how long it lasts. Raw honey retains more fine particles — bits of pollen and wax — that act as seed points for crystals, so it tends to crystallize sooner and more coarsely. Pasteurization and fine filtering remove most of those particles and slow the process down, which is why processed honey often stays smooth and pourable for longer on the shelf. Both are working from the same low-water, high-acid chemistry underneath, and both are stable at room temperature for a very long time when the jar stays sealed and dry.

Honey is one of the pantry items covered elsewhere on this site that carries no expiration date at all, for exactly this reason — there is no meaningful point at which a sealed jar becomes unsafe under normal storage. It is still worth keeping track of, just for a different reason than safety: it is easy to forget a jar is already open at the back of a cupboard and pick up a second one at the shop.
