How long do carrots last in the fridge?
The short version: a whole, unpeeled carrot stored properly in the fridge typically keeps for three to four weeks, sometimes longer. Peeled or ready-trimmed carrots, once opened, are usually good for a couple of weeks. A carrot that has actually been cut — sliced, chopped, exposed at the cut face — behaves like any other cut vegetable and is best used within about a week. What decides most of this is not really spoilage in the way most people picture it. It is water.
Why a carrot can outlast almost everything else in the crisper
A carrot is a root, not a leaf, and that single fact explains most of what follows. Lettuce and spinach are mostly surface — thin leaves with a huge area exposed to the air — so they lose water and wilt within days. A carrot is the opposite: a dense, low-surface-area core wrapped in a skin whose entire job, while the plant was alive, was to hold moisture in against the surrounding soil. That skin does not stop working the moment the carrot is pulled from the ground. Left intact, it keeps doing roughly the same job in a fridge drawer that it did underground, which is why a whole carrot can sit for weeks while a bag of spinach next to it is finished in four or five days.
So what actually ends it — a carrot mostly dries out, it does not really rot
This is the part that surprises people: a carrot going bad in the fridge is usually not a bacterial-spoilage story the way meat or dairy is. It is a moisture story running in reverse. A fridge is, deliberately, a dry environment — cold air holds less water than warm air, and a refrigerator's cooling cycle constantly pulls humidity out of everything inside it that is not sealed. A carrot's skin slows that water loss down a great deal, but it does not stop it completely, and over enough days in dry, circulating air, the carrot loses water faster than anything else typically goes wrong with it. The result is the carrot everyone recognises: not smelly, not slimy, not visibly rotten — just soft enough to bend into a loop instead of snapping.
There is an opposite failure mode too, worth knowing so you do not overcorrect. A carrot sealed up wet, with condensation trapped against the skin, can develop soft, mushy spots or a white blush and eventually mould — ordinary spoilage caused by too much standing moisture rather than too little. The goal is not maximum humidity. It is enough moisture to stop the fridge pulling water out, without trapping standing water against the skin.
Whole, peeled and cut carrots are not the same clock
- Whole, unpeeled, in a bag or container. This is the version that keeps three to four weeks, sometimes longer for a firm carrot bought in good condition. The skin is still doing its job.
- Peeled or pre-trimmed ("baby") carrots. Removing the skin removes the barrier that was slowing water loss, and these are usually sold already cut down to a higher surface-area-to-volume ratio besides. Once the bag is opened, treat the package's own use-by guidance as the real number, and expect something closer to two weeks than four.
- Cut, sliced or chopped. The cut face has no protection at all, and a much larger share of the carrot is now directly exposed to drying, circulating air. This is functionally the same category as any other cut vegetable — a few days in a sealed container, not weeks.
The pattern underneath all three is the same one that shows up with milk once it is opened, or an onion once it is cut: an intact food and an exposed one are not running on the same clock, and the moment that clock resets is the moment the skin or shell stops doing its job.
The bendy-carrot trick
Because the usual failure mode is water loss rather than actual spoilage, a limp carrot is often recoverable in a way limp lettuce is not. Trim the ends, cut the carrot into a size that fits a bowl or jar, cover it with cold water, and leave it in the fridge for a few hours or overnight. A carrot that went soft purely from dehydration will visibly firm back up, because the water it lost is exactly what the soak is putting back. This only works for the dehydration case: a carrot that is genuinely rotting is soft in a different way — mushy, slimy or off-smelling rather than simply bendable — and no amount of soaking fixes that. The trick rescues the common case, not every case.
What actually helps
- Leave the skin on until you are ready to cook, and store the carrot unwashed if it came unwashed — the skin is the barrier doing the work.
- Store in a bag or container rather than loose on a shelf, so a little humidity stays around the carrot instead of the fridge's dry air constantly pulling more away.
- Cut the green tops off before storing, if you bought carrots with the tops still on. The tops are still alive and keep drawing moisture out of the root to stay fresh themselves, at the root's expense — the same reason potatoes are better off away from their own sprouting eyes, and onions away from their tops.
- Use the crisper drawer, and its higher-humidity setting if the fridge has one — it exists for exactly this kind of vegetable.
- Keep carrots away from apples, pears and other ethylene-producing fruit, which speed up the process that turns a carrot bitter over time.
The part that is easy to lose track of is not really the chemistry above — it is which bag in the crisper is the one opened last Tuesday versus the one bought yesterday, especially once both have lost their labels to the same drawer. None of this needs to be memorised as a rule. A carrot lasts as long as it is allowed to hold onto its own water — skin on, wrapped enough to slow the fridge down, away from anything trying to speed up the process it would rather not go through yet.
