How long do cut vegetables last in the fridge?

The short version: most cut vegetables are good for somewhere between two and seven days in the fridge, and where a particular vegetable lands in that range has almost nothing to do with the vegetable's own reputation and almost everything to do with how much water is in it, how small the pieces are, and how it is stored. A whole vegetable and a chopped one are, in food-safety terms, two different objects. Cutting starts a clock that the whole vegetable was never running.

Why cutting starts a new clock

A whole vegetable's skin is not decoration. It is a barrier that keeps moisture in, keeps bacteria out, and keeps the plant's own enzymes separated from the air they react with. A knife removes all three protections at once, along every surface it touches. Enzymes that were sitting quietly inside the cells are suddenly exposed to oxygen and start doing what they are built to do — which for many vegetables is browning, softening or turning the cut edge slightly translucent. At the same time, the cut surface is now open ground for whatever bacteria is on the knife, the board, or the air of the kitchen, and it is losing or absorbing moisture at a rate the intact skin never allowed. None of this makes a freshly cut vegetable dangerous. It just means the whole-vegetable shelf-life numbers stop applying the second the knife goes in.

What actually determines how long it lasts

How much water is in it. This is the single biggest factor, and it is why two vegetables can look equally fresh at the moment of cutting and behave completely differently four days later. Watery vegetables — cucumber, tomato, courgette — have cell structures that collapse quickly once cut, so they turn soft and watery fast. Dense vegetables — carrot, celery, cabbage, bell pepper — hold their structure much longer, because there is simply less water to lose.

How small the pieces are. Every cut adds exposed surface area, and exposed surface area is where moisture loss and bacterial growth both happen. A carrot cut into two long batons keeps noticeably longer than the same carrot diced small, even stored identically. If you know a vegetable will sit for a few days before it is used, cutting it larger is a real way to buy time.

How it is stored. An airtight container slows moisture loss for most cut vegetables. Leafy greens are the exception — they need to be genuinely dry before they go in, because trapped water on wet leaves is what causes them to turn slimy within a day or two, faster than if you had not washed them at all yet. For a few dense vegetables, particularly carrot and celery sticks, submerging the cut pieces in a container of water and changing the water every couple of days genuinely extends their life, because it replaces the moisture the cut surface keeps losing instead of just slowing the loss down.

Temperature. The same rule as every other perishable food in the fridge: colder and steadier beats warmer and fluctuating, and a middle shelf toward the back stays more consistent than the door.

Rough ranges, by type

  • Leafy greens, washed and cut. A handful of days, but only once genuinely dried before storing — wet leaves in a sealed container rot faster than they would sitting out.
  • Watery vegetables — cucumber, tomato, courgette. Realistically a day or two at their best. Texture goes before safety does; they turn soft and watery well before there is any real spoilage concern.
  • Dense vegetables — carrot, celery, cabbage, bell pepper, broccoli. Closer to a week, especially in a sealed container, and longer still for carrot and celery kept submerged in water.
  • Cut alliums — onion, in particular. A few days, and worth keeping tightly covered on its own; cut onion is efficient at picking up and giving off odours to everything else in the fridge.

These are starting points, not a table to memorise. The vegetable in front of you is the actual evidence.

Browning is not the same as spoiling

A cut potato, apple or avocado turning grey-brown at the edges is oxidation — the exposed flesh reacting with air — and it is a cosmetic change, not a safety one. It affects appearance and sometimes texture, not whether the vegetable is safe to eat. A splash of water, or simply trimming the discoloured surface, deals with it completely. The signs that actually mean something has gone wrong are different: a sour or distinctly off smell, a slimy or sticky film that was not there when you cut it, or visible mould. Those three are worth acting on. Colour alone, on most cut vegetables, is not.

The thing that actually helps

The hard part is rarely knowing the rule — it is remembering, three days later, which container holds the peppers you cut on Sunday and which holds the ones from Wednesday's shop, especially once they are both sitting in identical containers on the same shelf. The same fix that works for an opened carton of milk works here: mark the day you cut it, on a piece of tape on the container or a note on the shelf. "Cut Sunday, it's now Wednesday" is a question you can answer in a glance. An unlabelled container of chopped vegetables is not, and that gap — not the vegetable itself — is usually what turns a perfectly good batch into one nobody trusts and everybody avoids.
