How long is food safe in the fridge during a power outage?

The short version: a fridge that stays closed holds food in the safe range for about four hours. A freezer that stays closed and is fully stocked holds a safe temperature for about two days — roughly half that if it is only half full. Those two numbers matter far more than the length of the outage itself, because the single biggest variable is not how long the power was off, but how many times the door opened while it was.

Why the door matters more than the clock

A fridge without power does not warm up because the cold suddenly vanishes. It warms up because cold air is heavier than room-temperature air, and every time the door opens, that cold air pours out along the floor while warmer air takes its place. A closed fridge — insulated, and full of cold mass in the form of jars, cartons and produce — loses temperature slowly, often taking most of a working day to drift out of the safe range on its own. Open it every twenty minutes to check on things, and the same fridge can be back in the danger zone within an hour, because every open door spends down the same four hours a little faster. The four-hour figure assumes the door stayed shut. It is less a countdown than a budget, and it is one you control more than the outage itself.

The fridge clock: about four hours

A fridge is normally kept at or below 4°C (40°F), which is the upper edge of what food-safety guidance treats as the safe zone. Above that, food sits in the same danger zone that governs how long anything can safely be left out on a counter — the range where bacteria that cause illness multiply fastest. A fridge that has lost power is not a special case of that rule; it is a slow-motion version of leaving food out, and it earns roughly the same four-hour budget once the internal temperature actually crosses that line, which a closed, well-loaded fridge is often slow to do.

The freezer clock: it depends on how full it is

A freezer behaves completely differently, because frozen food is not just cargo — it is thermal mass. A full freezer is, in effect, a very large block of ice: dense, cold all the way through, and slow to warm because there is so much of it to warm. Left closed, a full freezer commonly holds a safe temperature for about 48 hours; a freezer that is only half full has roughly half as much cold mass working for it and holds for closer to 24 hours. This is also why freezing extra water in reusable containers, when there is room, is worth doing before you ever need it — a fuller freezer is a slower one, and that is true whether the extra mass is food or ice.

What to actually do while the power is out

  • Decide before you open the door. Work out what you need in one trip rather than opening the fridge repeatedly to check on things — every open door is time taken directly out of the four-hour budget.
  • Keep the freezer closed and full. If it is only partly full, grouping items together toward the centre helps them hold each other's cold; a freezer with a lot of empty air space around the food loses its temperature faster.
  • Note the time, or a temperature if you have a thermometer. An appliance thermometer left in the fridge and freezer is the only genuinely reliable way to know what happened while you were not watching — a guess reconstructed afterward is a poor substitute.
  • Use a cooler with ice for anything you will need repeated access to — drinks, snacks for children — so the main fridge door can stay shut for everything else.

Judging it once the power comes back

A short blip — the lights flickering for a few minutes — is not the same event as an outage that ran overnight, and the difference is worth actually tracking rather than guessing at afterward. If you kept a thermometer in the fridge, its reading when the power returns is the most trustworthy signal you have; food that is still at or below 4°C has not spent meaningful time in the danger zone regardless of how long the outage lasted on the clock. Without a thermometer, the honest fallback is the length of the outage itself, counted against the four-hour and 48-hour figures above — not how the food looks or smells. As with food left out on a counter, this is a case where your senses are a genuinely worse test than usual: the bacteria most associated with foodborne illness do not reliably announce themselves through smell or appearance, so "it still looks fine" is not the same evidence here that it is for a carton of milk. Standard guidance is blunt about the doubtful cases for exactly this reason: when you cannot be reasonably sure a fridge or freezer stayed cold enough for long enough, treat the food as unsafe rather than testing it.

What tends to survive an outage, and what does not

Some things are genuinely forgiving. Hard cheese, butter, most condiments, whole uncut fruit and vegetables, and bread all sit outside the highest-risk category and can generally be judged on their own terms rather than the outage's terms. Raw meat, poultry and fish, fresh dairy, cut produce, and anything already cooked and cooling in the fridge sit at the other end — they were closer to the edge of their own safe window before the power ever went out, and an outage does not reset that clock, it just runs it faster. That last point is easy to miss in the moment: an item that already had one day left on its own countdown does not get the benefit of the doubt just because the fridge door stayed shut.

That last point is really the hardest part to reconstruct after the fact — not just how long the power was out, but what was actually in the fridge and how old each thing already was when the lights went. None of this needs turning into an emergency-preparedness routine. The habits that matter are small and mostly about restraint at the one moment restraint is hardest: not opening the door to look, and treating a genuine doubt as a reason to let something go rather than a reason to taste it and see.
