Why does frozen food still have a best before date?

The short version: the best-before date on a frozen bag is a quality estimate, not a safety limit, and it is describing a very specific freezer that is not yours — a laboratory one held at a constant, ideal temperature. Freezing does genuinely stop the clock that makes food unsafe. It does almost nothing to stop the much slower, much less dramatic clock that makes food taste worse. The date on the packaging is trying to estimate that second, slower clock, under conditions your kitchen freezer does not actually have.

It is almost always a quality date, not a safety one

Most dates on frozen food are printed as "best before" rather than "use by", and the distinction carries over from the fridge: best-before is the maker's estimate of how long the product stays at its best, not a line past which it becomes dangerous. This makes sense once you separate the two things a date can be warning you about. Safety, in a freezer, is mostly not in question — bacteria that were on the food when it went in are dormant, not multiplying, for as long as it stays frozen solid. Quality is a different story, and it is the one the date is actually describing: how long the manufacturer expects the texture, flavour and colour to hold up before the product is noticeably not as good as it was on day one.

There is one place this gets genuinely more serious: raw meat, poultry or fish that was frozen while already close to or past its original use-by date. Freezing pauses decay, it does not reverse it, so the safety story for that item is really about what state it was in the moment it went into the freezer, not the printed frozen-food date. That is the one exception worth remembering — everything else on this page is about quality, not safety.

What is still quietly happening inside a frozen bag

A freezer is not a pause button on everything, just on the biological part. Three slower processes keep running even at -18°C. Moisture at the food's surface slowly turns to vapour and migrates toward the coldest part of the package, which is the ice you eventually see, and the dry, greyish patch left behind on the food is freezer burn — a texture and flavour problem, not a safety one. Fats slowly oxidise, which is why fattier cuts and oily fish drift toward a faintly stale taste well before leaner foods do. And the food's own enzymes, in plants especially, keep doing a small amount of the same chemistry that ripened them in the first place, just drastically slowed down rather than switched off. None of these three processes cares what the calendar says. They run at whatever speed your actual freezer gives them, which is the part the printed date cannot know in advance.

The date describes a freezer that is not yours

The number on the packaging is tested in conditions a home freezer rarely matches. A test freezer holds a genuinely constant temperature. Yours cycles every time the door opens, warms slightly during a defrost cycle if it is frost-free, and sits a few degrees warmer near the door than at the back. Every one of those swings gives moisture a small extra push toward the surface, which is the same mechanism as freezer burn — so two identical bags, one in a freezer that gets opened twenty times a day and one that barely gets touched, will not age at the same rate no matter what the box says. The printed date is a reasonable starting estimate for a food that has never left factory conditions. It stops being a very useful number the moment your freezer's actual behaviour diverges from the test lab's, which for most home freezers is immediately.

The date that actually matters is the one nobody prints

This is where the printed date runs out of usefulness twice over. First, most food that ends up in a home freezer was never a factory-frozen product at all — it is fresh meat, bread, or last night's leftovers that you froze yourself, and nothing on the original packaging was ever estimating a frozen state to begin with. Second, even for genuinely factory-frozen food, the date on the box describes the day it was made, not the day you actually put it in your freezer, which for something bought on sale and frozen a week later is already a different starting point than the label assumes. In both cases, the number that would actually help — how long has this specific bag, in this specific freezer, actually been frozen — is not written anywhere. It exists only if someone remembers it, and freezers are uniquely bad at helping anyone remember anything, because nothing in there wilts, smells, or visibly changes on a timescale you would notice by looking.

What to do instead of trusting the printed date

  • Treat a factory best-before date as a rough estimate, not a deadline. Food a little past it is not unsafe from freezing alone; it may just taste a little less like itself.
  • Freeze fresh food while it is still genuinely fresh, not as a last resort. Freezing pauses whatever state something is already in — it does not reset a tired vegetable or meat that is already close to its use-by date back to day one.
  • Write the date you froze it, on the item itself, every time. This is the one number that actually reflects your freezer, your habits, and your household — and it is the one number nobody printed for you.
  • Judge quality with your senses once thawed, the same way you would with fridge food. Colour, smell and texture tell you far more about a frozen item's actual condition than a date that was estimating a different freezer entirely.
